Morning Comfort Food: Breakfast Quinoa Recipe
Typically thought of as a side dish, quinoa can be a protein packed breakfast treat too! Packed with protein, you’ll feel energized and ready to begin your day.
2 Cups of right for your type milk (almond, soy, rice)
1 Cup quinoa, rinsed
2 Tablespoons of honey, agave or other acceptable sweetener (optional)
? Teaspoon of cinnamon, nutmeg, or your preferred flavoring
1 Cup of fresh berries (frozen can be substituted, but thaw and drain the night before) or other beneficial fruit.
In a small saucepan, bring milk to a boil. Add quinoa and return to a boil. Cover pan, reduce heat to low and simmer for about 15 minutes, or until ¾ of the milk has been absorbed by the quinoa.
Drizzle honey over cooked quinoa and stir. Add spice. If desired, add additional milk to preferred consistency. Add fruit and cook for another minute. Enjoy!
